The Heart Behind the Château


Château Caroline began with Thierry Thaure and Carol McCloskey-Thaure, who turned a shared passion for wine into a hands-on winemaking endeavor. Partnering with longtime friends Marga Ortigas-Wedekind and Cris Wedekind, what started as a hobby soon blossomed into a boutique winery known for its artisanal blends and heartfelt craftsmanship. With an estate vineyard in Mount Hamilton, trusted growers along California’s Central Coast, and winemaking rooted in Paso Robles, our wines reflect a thoughtful blend of tradition, place, and connection.

Our Passion


We offer a selection of meticulously crafted wines, with various styles paying homage to some of the most celebrated wine-growing regions of France—Provence, Rhône, Burgundy, and Bordeaux. As a limited-production winery, we take pride in the personal care given to each bottle—from grapes handpicked by the owners, their families, and friends, to the thoughtful craftsmanship behind the winemaking itself.

La Petite Caroline

A bright, approachable entry into the Caroline wine family. With expressive label art and an easy charm, La Petite Caroline is made for laid-back gatherings, weeknight dinners, and moments that don’t take themselves too seriously—but still deserve a great glass of wine.

Château Caroline de Californie

The cornerstone of the Caroline portfolio. These wines are elegant, structured, and thoughtfully made, with beautiful classic label artwork that reflects their depth and refinement. Crafted in small batches, they’re meant for slower evenings and meaningful meals — where every detail is considered.

The Art of the Labels


The artwork on our bottles showcases slices of life in the beautiful coastal city of St. Tropez and holds a special meaning for us. Thierry has vacationed in Provence since he was a child, always drawn to the natural beauty, rich culture, and vivid colors of the region. When he brought Carol to the South of France for the first time, she immediately fell in love with it too. Each label features an original watercolor by Michel Guy-Nochet, who practices his craft in the Port of St. Tropez. His work brings the colors of Provence to life, adorning our bottles and inviting a sense of place and reverie. Each label expresses the vibrancy and joy we hope you’ll experience while drinking our wines—and may even transport you to a sunny seaside café in the South of France.
